We had 480 guests at a corporate shareholder dinner in downtown Fort Worth, a menu that had to read 'Texas but polished,' and a board chair who is, frankly, hard to impress. Blind Dog showed up at 4 a.m., set the carving station before our AV team finished cabling the stage, and the brisket was the thing people emailed me about for the next month. We've used them for every flagship event since — three years running.
