WHAT WE SMOKE FOR

Four events. One pit crew. Zero improvisation.

From a 60-person board dinner to a 500-guest rehearsal on a football field, we've hauled the smokers there, lit the fire at 2 a.m., and carved on-site. Pick your event — we'll meet you in the parking lot with a carving station.

WHAT'S INCLUDED

Six things that separate a caterer from a guy with a pickup.

We get it — you've been burned before. A "BBQ caterer" shows up with a foil pan and a hand-scrawled invoice. Here is what every Blind Dog booking includes, in writing, before you wire a deposit.

01

On-site pit & carving

We roll up with offset smokers (for tailgates and small events) or finish in warming boxes after pit-cooking at our Fort Worth commissary. Either way: a carver in a branded apron, slicing to order.

02

Setup & full teardown

Tables, chafers, signage, plates, napkins, serving utensils, trash, and recycling — in, set, served, out. The venue looks better after we leave than before we arrived.

03

Dietary & allergen tags

Gluten-free, dairy-free, nut-free, and vegetarian side options on every menu. Every buffet line is labeled with full ingredient cards. We ask about allergies in the quote form — twice.

04

Licensed, insured, permitted

$2M general liability, TX food handler certifications on every crew member, and a temporary food-service permit wherever the venue requires one. COI to your planner in 24 hours.

05

Payment terms, in writing

50% deposit to lock the date, 50% seven days before service. No surprise service charges, no corkage fees, no fuel surcharges. Net-30 available for corporate accounts.

06

Beer & wine policy

We're not bringing a bar — but we work hand-in-hand with your venue's TABC-licensed bartender. If your venue allows BYOB, we pair the menu around it. No upcharges either way.

CASE STUDY  //  2023 NCAA COTTON BOWL

3,200 plates.
One night.
Zero complaints.

“We had thirty-eight VIP hospitality zones to feed across two stadiums in one evening. Blind Dog ran zones fourteen through twenty-one on the south concourse. They showed up at 4 a.m., they carved through 1,800 pounds of brisket and forty-two whole hogs, and the only call I got that night was a thank-you from a coach's wife.”

If your event is the kind of room where the plate has to land right — board retreat, rehearsal dinner, milestone birthday, donor reception — book the crew that did the job when it could not fail.
